Capella Pedregal | Cabo San Lucas | Mexico

We have visited Mexico on three occasions, and if this number were to continue rising steadily over our lifetime I would be one happy girl.  We absolutely love Mexico and it is a location that we would love to visit each and every year if we could.  I cant quite put my finger on why we love Mexico more than a number of other destinations we have explored, but there is quite the list of pros and really no cons that i can think off that relate to Mexico itself. The only real con is that we reside in Australia & the physical distance between us and a Mexican vacation is vast!

PROS

*REAL Mexican food - If you have not traveled to Mexico there is a 98% chance you have never eaten authentic Mexican food. Lets get one thing straight, just because someone puts something in or on a tortilla, it is not Mexican! Mexicans do not put cheddar cheese on anything, the food is light, fresh, full of flavor & healthy! It is complex, yet simple & utterly delicious. Also, Mexican food is not spicy, which is contrary to what everyone I know thinks! They offer heat with each dish by way of a side dish of complex hot sauces & salsas.

*The Geography - Pristine turquoise seas alongside arid desert & lush rainforests - do i need to say more?

*History - The rich & long history of the Maya civilization that dates back to 2600 BCE. There were many monumental structures that were built during this period and beyond - many of which you can visit and learn of their incredible history.


*Sights - Ancient UNESCO world heritage sites, sacred Cenotes, desert oases (yes they exist), all year round some of the most spectacular and diverse whale watching, and one of the original 7 wonders of the world resides in Mexico, the ruins of Chichen Itsa

We would absolutely love to visit Mexico with our son Ryder & so my ever expanding list of areas to visit, sights to explore & hotels to reside in is vast. 

On two of the three occasions we have visited San Jose Del Cabo which is situated in Baja California Sur, which is covered by the Cabo San Lucas international airport. We love this quiet, serene & spectacular area of Mexico so we are certainly tempted to go back. Given the flight is just a couple of hours from LAX, it is also an easy option with toddler in tow. On both prior occasions we stayed at Cabo Azul (see post here), which we adored, but we would also like to check out a new hotel & just maybe Capella Pedregal in Cabo San Lucas is the one! I'm seeing Margaritas & Fish Tacos by the beach every single day.
